Roast lamb

It is an all-time favourite of many and to prepare it, you should have the proper ingredients like garlic, cumin, cinnamon, oregano, and some lemon. Put the ingredients in a blender along with 1 tablespoon of salt and 2 of black pepper. You should blend it till it smooths out and then put the lamb into the mix. Massage it all over and keep it in the fridge for a minimum of 24 hours and for the best quality, you could store it for 2 days.

Then, remove it 1hr before you intend to cook and heat the oven to 160°C. Spread onions and pour pomegranate over it. You should cook it for about 4 hours. After that, you should remove the foil and pour the pomegranate juice into a saucepan, and later add honey to it. Increase the oven temperature to 220°C and cover the lamb back and continue cooking it for 30 more minutes. At the end of the long cooking ordeal, you could pour the pomegranate glaze all over the lamb and the onions. Then, mix the pomegranate seeds with yogurt in a bowl and present the delicious dish on the table.

The shepherd’s slow-roasted lamb shoulder

 It is
another fantastic dish, and for this one, you would need to make the marinade
first. To prepare the marinade, you would need lemon juice, coriander seeds,
and onions. Place the onions and finely chop them. Mix the yogurt, 80ml of oil,
and 2 tablespoons of salt flakes along with some pulse. Then you should place
the lamb in a bowl and coat it with the yogurt mixture. Allow it to chill, and
cover it for the night so that it marinates well. Then, on the day, you should
preheat the oven to 220°C and place a heatproof wire rack over it and cover it
with baking paper.

You should take out the lamb and wipe the excess with a paper towel. Then, place it on a papered rack and a tray. Roast it for 30 minutes or till it starts to appear golden on the top. Reduce the oven’s temperature to 130°C and continue to roast it for 3 hours more. You could make the salad with olives, cucumber, dates, and celery. Combine the rest of the pomegranate and orange to make the molasses and the juice. Then, transfer the salad and slice the lamb. Arrange it on top of the salad and squeeze the pomegranate. lamb with zucchini and feta salad. You should marinate it in a bowl and keep it
overnight. Then, preheat the oven to 120°C. Heat the oil in a deep-sided
roasting pan over a medium to high flame. Then, you could add some carrot,
onion, celery, and garlic to the mix, and continue to stir it till the onion
has become soft. Cover it with baking paper and cover it with foil. Then, roast
it for 6 hours or until the lamb becomes extremely tender. Arrange the lamb on
